FIELD TO BOTTLE
On the nose, tropical fruit, blood orange, hibiscus & honeysuckle harmonize with notes of fresh meadow & red clover. Bright palate has hints of kumquat, apricot, toasty brioche & fresh picked herbs. Balanced with a crisp, dry finish.
Aging: 100% whole cluster with 10 days of skin contact give this sparkling wine its orange hue. 6 months in neutral French Oak, then 2 months in stainless steel prior to 16 months on tirage using the Méthode Champenoise, the traditional method of making champagne.

Dry & diverse. On the nose earthy aromas of mushroom & dried sage harmonize with red currant & dark cherry, then finish with a hint of vanilla & spice. An elegant palate of lush red fruit, blood orange & freshly pulled espresso. Medium bodied with nice acid & tannins for a balanced structure.
Aging: 100% destemmed and fermented naturally on skins for 18 days. Aged in 33% new French oak and 77% neutral French oak barrels for 9 ½ months and finished for two weeks in stainless steel before bottling.

A fresh, crisp & dry chardonnay made in the Chablis style. Balanced structure with hints of green apple, mandarin, lemon and bright acid. Delicate bouquet of chamomile, jasmine, toasted brioche, lemon rind and stone fruit.
Aging: Fermented and aged 100% in neutral French oak barrels for 9 months sur lie, finished in stainless steel for 1 month prior to bottling.

Best served lightly chilled! Aromas of red & white blossoms with notes of wild strawberry, cranberry & red cherry. Fresh palate of red plum, spice & juicy strawberry. Light to medium in body, balanced acid and tannins.
Winemaker’s Notes: This is a unique and fun blend of varietals, culminating in a balanced “chill-able” red. We created a wine that is playful and light, with great structure, aromatics & bright red fruit. It can be enjoyed cold or room temperature—we love it chilled!

This Blanc de Blancs has a crisp, dry finish. Sophisticated structure with a balanced palate, good minerality & bright acidity. On the nose, hints of lemon zest, brioche, peach cobbler & key lime. Palate has notes of green apple, white peach, crisp pear & almond croissant.
Aging: Fermented & aged in neutral French Oak for 7 months , then transferred to stainless steel before its tirage bottling. Traditional Méthode Champenoise, with 28 months on tirage to ensure good lees contact in bottle & to enhance classic Champagne characteristics.
